Protein Powder Power!

Mixin’ It Up!

In this mini “Off-Season” I’m experimenting with new ways to use Protein Powder. Here’s another idea and I have to say it’s Crazy Good! ;o)

Protein Biscotti

Grocery List:

2 Scoops Protein Powder (Your flavor of choice….I used Vanilla & Chocolate)(Use standard scoop that comes with protein)

2 Scoops Flax

1 Cup Cooked High Protein Grain (examples: Cooked Oatmeal, Cooked Quinoa, Cooked Farro)

1 teaspoon Vanilla

1 teaspoon Cinnamon

1/2 Cup Chopped Nuts (I used Walnuts)

2 Whole Eggs

2 Egg Whites


Separate 2 egg whites then add 2 whole eggs, cooked Oatmeal (or other grain of choice), and vanilla. Whip these up with hand mixer. Add all dry ingredients: Protein Powder, Flax, Cinnamon, and Nuts.

Pour batter into a 9×9 inch baking pan. (I line my pan with parchment paper and spray with non-stick cooking spray.)

Garnish top of batter with whole nuts and a sprinkle of raw oats. (optional)

Bake at 350 degrees for 25 min, or until toothpick tests clean.

Take out of the baking pan and place on cooling rack as pictured.

Once cooled, slice into long thin strips (1/8″, 1/4″ to 1/2″ thick). See picture above….(Chocolate on left, Vanilla on right)

You really can cut as thin as you would like depending on how crisp you want the Biscotti.

Then place back in the oven and bake until crisp, or toasted… may want a little moisture remaining – if you want the Biscotti to have a touch of a “Chew” to it. Traditionally, Biscotti is pretty crisp.

This version of Biscotti is a great way to get Protein, good form of Carbohydrates and good fat (nuts).

Of course you can always add your choice of fruit (raisins, dates, prunes, banana, etc.) just remember this adds fructose to the equation, which may or may not be desirable.

I purposely try to minimize the sugar (carbohydrates). Make sure you read the Nutritional Information to ensure you’ve made the right choice. ;o)

This is great with your cup of mornin’ joe!! ;o)

Side Note:

You can use this same batter to make the “cake”, as pictured on the cooling rack, and simply cut into squares, as Cookies, or as muffins…VERY Versatile ;o)

Keepin’ It Clean!

Durin’ this lil mini-breather, as far as the “Fuel Plan” goes, I’m adding a few more carbs and more protein into the mix! (New protein sources -Lean Beef (Flank Steak) and Protein Powder).

My goal is to stay no more than 7 t0 8 lbs heavier than competition weight.

Hoot Protein Cake

Do What? Yeah crazy name, but here’s the deal….throughout my time on this great planet, friends & family have bestowed a number of suedo names upon me: “Amos”, “Aimz”, “Sutter”, “Qmy Suttez”, “SooterScooterSaladShooter”, to name a few, and “Lippy” being the most recent -courtesy of my Dream Team Trainers. My friends Tommy & Irene have called me “Hootnannie” for years and when chattin’ up this concoction, they christened it “Hoot Cake”. There ya go ;o)

The Blend

Ingredients: Chocolate Protein Powder approx 1/2 cup, 2 scoops flax, 2 scoops wheat germ, 1/2 cup chopped nuts, 5 dried prunes chopped, 7 egg whites, and 2 yolks. (Optional Garnish: oat meal and chocolate covered sunflower seeds…just to dress it up & make it festive! ;o) )

The Mix

How To: Pre-Heat your oven to 350 degrees. In a mixing bowl…separate your egg whites, but add 2 yolks back, add protein powder, flax, wheatgerm, and chopped nuts. Mix with spoon or hand mixer, just enough to blend all the ingredients together. Line a 9×9 inch cake pan with parchment paper, spray the paper with non-stick cooking spray. Pour the mixture onto the parchment paper in the pan evenly. Take the cut up prune pieces and evenly space them in the mixture in the pan – pressing them down so that the mixture covers them. Sprinkle optional garnish on top and bake for 20 to 25 minutes.

Nice to have another piece of hardware…..and nice that the figurine has varied her pose and changed her hair….but it’s still screamin’ 80’s…huh?!! ;o)

Man…now that I look at “Ms. StatuEtte” again….she’s lookin’ a lil possessed! Scary!! ;o)

What’s Next???

I’ve got my sites set on Nationals in November!!

That’ll give me some time to make further improvements ….lower half is “THE” target….believe me I KNOW……;o)

And it will be a great way to wrap up 2011!
