Long time No Chat ;o/

Not that “Thangs” haven’t been “Happnin'” round here…OH! They’ve been happnin’ fo sho!! That’s the problem….I’m truly NOT convinced that there are still 24 hours in a day, or 365 Days in a year for that matter!

ANYWAY…..Let’s catch up…shall we? ;o)

Tis the “Off” Season!

It may be the “Off” Season…..but believe me that doesn’t mean my “Sutter Self” has been laid up on the couch! ;o)

No siree, honey, I’ve still been in the gym at the Crack-O-Dawn and still eatin’ in the same meal pattern, just addin’ in some extra “Good” carbs.

I’m tryin’ my best to stay within 5LBS of competition weight….so far so good…even with my major “Turkey Day Throw Down”!!  The only thing I didn’t eat Thanksgiving Day was Salad….I’ll be Dang if I was gonna have one lettuce leaf that day!!  ;o)

I hope that you too enjoyed some GREAT EATS and most importantly spent some quality time with family and friends and expressed to them how incredibly THANKFUL you are to have them in your life.

I’m EXTREMELY thankful to have family members and friends who have so positively impacted my life!

I SO look forward to more fun times as this year comes to an end and those yet to come in 2011!!!

Oh! The Weather Outside is Frightful, but the Food in the Sutter Kitchen is SO Delightful!

Yes, my friends, I’ve been experimentin’ and concoctin’ thangs in the Sutter Kitchen – a girl’s gotta eat!

I think that’s the ONLY reason I found the time to put these two recipes together. ;o) They’re Easy, Quick, Healthy, and most of all Tasty! Check’em out….and please give some feedback  – especially if you take them to the next level! ;o)

Sutter’s Sweet Potato Banana Bread

Whatcha Need:

4 Ripe Bananas

5 Sweet Potatoes (or approximately 2 cups worth…sweet potatoes are kinda random in size)

2 Eggs

1 cup Chopped Almonds (or whatever nut you prefer)

2 TBSPs Cinnamon

1 tsp Baking Soda

1 tsp Baking Powder

3 Scoops Ground Flax (the little scooper that comes in the Flax I buy…approx 1 TBSP measuring scoop – 3 of ’em)

1 tsp Vanilla

1 tsp Salt


Okay….here’s whatchado…

Ahead of time….some 25-30 minutes….boil your sweet potatoes.

Don’t fuss with peelin’ them cause the skin is gonna fall right off when you drain’em out of the cooled water! A VERY COOL trick I discovered due to sheer laziness! I mean have you ever peeled a Sweet Potato?! Enough Said!! ;o)

Once you remove the skin, mash those suckers up with a fork in a mixin’ bowl and then they’ll be ready whenever you’re ready to make this recipe.

Ready? READY!!

Measure out your flour and pour it into a sifter. Add the Baking Powder, Baking Soda, Flax, Salt, and 1 TBSP of Cinnamon. Sift it all together and set that mixture to the side.

Separate your egg whites from the egg yolks and set them to the side as well….we’re gonna use’em both, but as they say “Absence makes the heart grow fonder….” and when you get back together……watch out! whoo! ;o)

Okay, I digress….

Take your Mashed Sweet Potatoes and add them to your peeled bananas, the other TBSP of cinnamon and Vanilla. Mix’em good using an electric mixer.

Clean your mixer…I mean squeaky clean ya’ll! Then and ONLY then, beat your egg whites until they peak.

If your mixer ain’t clean, then your egg whites are gonna be soupy….no peaky….you follow?! :O)

Using a large spoon, fold the egg whites into the sweet potato, banana, etc mixture.

Next, fold in the sifted flour mixture and chopped nuts. Just until the dry ingredients are no longer visible….kinda like makin’ pancakes or brownies….you don’t want to over mix. We’re tryin’ to keep the “fluffy” aspect of those peaked egg whites. ;o)

Got Batter?

Up to you as to whatchawannado next…..spray a muffin pan with non-stick cookin’ spray, or grease up a loaf pan….whatever your pleasure.

Put the batter in, filling no more than half way in each muffin notch or loaf pan.

Bake’em at 350 degrees for 25-30 minutes….or until golden brown and the toothpick poke trick comes clean (poke muffin or loaf with a toothptick, then pull the toothpick back out. If there is no batter stickin’ to the toothpick, then it’s good to come on out of the oven!)

Slice it up and eat it up! Spray with some Non-Fat Butter or go crazy and put REAL butter on it and maybe a little drizzile of honey! I’m not judgin’….and afterall…it’s the “OFF” Season! ;o)

Notice there’s ZERO sugar in this recipe……the Sweet Potatoes and Bananas add enough sweetness. ENJOY!!

Holiday = B.Y.O.A….

Tis the Season for Parties – Right??!! Whether you go or throw’em, you know that your gonna most likely need to prepare an Appetizer. It’s convenient and it’s the considerate thing to do, so that your friends will want to throw more parties at their house instead of yours. ;o)

Here’s a mixture that once again is Easy to make, Quick, Healthy, Tasty and better yet only dirties one appliance – your food processor!

Tasty Tapenade

4 stalks Hearts of Palm

1/2 Roasted Red Bell Pepper

1/2 Cup to 1 Cup Artichoke Hearts packed in olive oil

1 Lemon (juice only)

1 Lime (juice only)

1 TBSP Chili Garlic Sauce

1 TBSP Sriracha Hot Sauce

1 TBSP Capers

1 tsp Ground White Pepper

1 tsp Ground Corriander

1 tsp Ground Cumin

Add all of the above into your food processor and blend until its a thick, somewhat smooth consistency.

Dip with Brown Rice chips, whole wheat pita chips or mini-bell peppers, celery sticks, etc., or spread on whole grain crackers.

YUMMY!! Spread the Merriment!!
